Creating sweet memories in the kitchen is a joy many families share, and few things evoke nostalgia as powerfully as homemade Creole candy. Using the Nogues Praline Mix from Sainte Sophie Creole Confections, you can craft delicious pralines that celebrate tradition and satisfy your sweet tooth. With just a few simple steps, you can whip up these delightful confections, making them perfect for gatherings or thoughtful gifts.

Gather Your Ingredients

Before you jump into candy-making, it's essential to gather all the required ingredients. The Nogues Praline Mix simplifies the process, needing only a few extra items.

Ingredients:

  • 1 piti package of Nogues Praline Mix

  • 1/4 cup of butter (about 6tbl) salted or not

  • 1/2 cup of cream

  • 2 cups of pecan halves (or nut of choice)

Scaling the Recipe:
If using the entire contents of one of the larger Nogues Praline Mix bags, double or triple the amounts of all other ingredients—heavy cream, butter, and pecans—respectively, to maintain the balance of flavors and achieve the desired consistency. -

With everything prepped and measured out, you are ready to go! Remember.  You can be creative. Making pralines should be fun. If you want your candy soft and chewy use more cream or milk. If you want a harder candy, then cook it longer.

Prepare Your Workspace

An organized kitchen can greatly streamline your candy-making process. Start by ensuring your cooking area is clean and your utensils are readily available.

You’ll need:

  • A medium-sized saucepan( or candy pot)

  • A candy thermometer

  • Measuring cups and spoons

  • A mixing bowl

  • A large spoon 🥄 I've used both wood and metal

  • A baking sheet lined with parchment paper or greased pan

Mixing the Praline Mix

  1. In your saucepan, melt the butter over medium heat.

  2. Once the butter has melted, add the cream or milk.

  3. Gradually stir in the Nogues Praline Mix. Ensure all ingredients are well combined.

  4. Cook the mixture, stirring continuously until it reaches the soft ball stage, around 235°F to 240°F on your candy thermometer.

This is when the delightful aromas fill the air and the simple ingredients combine into something extraordinary.

Add Nuts and Optional Ingredients

Once the mixture reaches the desired temperature, it’s time to personalize your pralines.

  • If you choose to add nuts, mix them into the candy right before removing it from the heat.

  • For an extra layer of flavor, consider adding a teaspoon of vanilla extract or a pinch of sea salt to elevate the taste.

Pouring and Setting the Candy

Now that your mixture is ready, it’s time to pour and set your pralines:

  1. Carefully pour the hot candy mixture onto your prepared baking sheet lined with parchment paper or buttered pan. For Drop Candy:If you prefer drop candies, use a cookie scoop or spoon to drop rounded portions of the mixture onto a parchment-lined cookie sheet or pan.

  2. Spread the mixture evenly, smoothing the top with a spatula if needed.

  3. Let the candy cool at room temperature until it sets completely, which usually takes a few hours.

This is an exciting moment as you watch the mixture transform from a liquid into a delicious treat!

Cutting the Candies

After the pralines have cooled and hardened, it's time to cut them into pieces.

  1. Once set, lift the sheet of candy off the parchment paper and place it on a cutting board.

  2. Use a sharp knife to slice the candy into squares or rectangles, depending on your preference.

  3. Store the cut pralines in an airtight container to keep them fresh. They can last up to two weeks at room temperature.

This step is where you see your hard work yield delightful, shareable treats.

Create Memorable Gifts

Homemade candies can be a wonderful gift that adds a personal touch. Consider packaging your pralines in decorative boxes or jars, and enhance the presentation with ribbons or handwritten notes. Ideal for birthdays, festive gatherings, or as a sweet gesture for neighbors.

Giving these treats encourages connection and creates lasting memories among friends and family.
